Oatmeal Cookies Yum Yum Yum!

Ingredients: 2 cups uncooked oats
                     1 1/3 cup all-purpose flour
                     3/4 tsp baking soda
                     1/2 tsp baking powder
                     1 cup brown sugar
3/4 cup and 1 tbs butter
                     1/4 cup granulated sugar
                     1 egg
                     1 tbs honey
                     1 1/4 tsp vanilla

Heat oven to 350 degrees. Combine dry ingredients, oats, baking soda, baking powder, salt, and flour in one bowl. Next in a separate bowl, mix butter with brown sugar and granulated sugar until fluffy. Next add the honey, egg, and vanilla to the sugar mixture. Then add in the dry mixture on low. If you add the dry mixture in and mix it too much, you will OVERWORK YOUR MIX. You don't want that to happen, so keep your speed on low and make sure that all the ingredients are mixed in well. Place on a greased cookie sheet or wax papered cookie sheet in whatever amounts you like. Bake for 11-15 mins and your done!

Tips: Please do not simply mix the sugar and butter for 30 secs and throw the rest of the ingredients in, I can't stress how important it is for you to mix it until you notice it become fluffy and looks like icing. It'll look so good when it's fluffy, that you'll want to eat it.

Also, when mixing all your ingredients together for your dough, try not to overwork it by being rough with it and trying to get it done too quickly. When baking you must take you time so your product looks and tastes well and delicious.

Mud Bars

Ingredients: 1/2 cups butter or margarine
                     1 3/4 cups granulated sugar
                     3/4 cup unsweetened cocoa
                     4 eggs
                     2 tsps vanilla
                     1/4 tsp salt
                     1 1/2 cups flour
                     1/2 cup pecans (optional)
                     1/2 cup Sweetened coconut flakes
                     3 cups mini marshmallows

For the Icing: Something I've done when I couldn't make my own chocolate frosting was buy chocolate frosting, melt it and pour it over the squares before you cut them. Then melt about a half a cup of butter and pour that over the icing once it hardens a little more.

Preheat the oven to 350 degrees. In one bowl, melt butter and add in sugar, cocoa, add eggs, add vanilla and salt. Then stir flour into this mixture, add the pecans and coconut.
After baking for about 25 minutes remove from oven and add marshmallow. Then bake for 10 more minutes and you're done. Voila, un grande desert!

Mmmm... Chocolate Pecan Brownies

Ingredients: 3/4 cups all purpose flour
                     1/3 cup margarine
                     1 tsp vanilla
                     2 large eggs
                     1/4 tsp baking soda
                     3/4 cup sugar
                     2 tbsp water
                     1/2 cup chopped pecans (optional)
1 pkg  milk chocolate morsels (melted)

Heat oven to 325 degrees. Cook for 30-35 mins. So, how I begin, is by mixing all the dry ingredients, so the flour, baking soda, and pecans (if you use them). Then in a separate bowl mix the butter and sugar until fluffy. By the way, please don't melt the butter, it's fine if it's room temperature, but don't melt if because then you'll never get a fluffy consistency. After it becomes fluffy add it to the dry mixture along with the eggs, water, and vanilla. Finally in a separate bowl melt the chocolate chips and add the to the entire mixture, then begin to mix everything together. I usually like to use milk chocolate chips as opposed to semi sweet because it gives me that taste in brownies that I love. But, if you're looking for a better more adult taste, use semi-sweet.

Chocolate Chip Oat Cookies!

Ingredients: 2 1/2 cups Flour
                      1 tsp baking powder
                       Pinch of Salt
1 cup or 2 sticks of butter
                      1 cup brown sugar
                      1/2 cup white sugar
                      2 eggs
                     1 1/4 tsp vanilla
1 whole package of milk chocolate chips
1/2 cup of uncooked oats ( I personally recommend 1/2 cup, but if you love the taste of oatmeal and cookies together, then add a whole cup!)

Heat oven to 350 degrees. In a bowl add flour, baking soda, and salt. In another bowl mix together the butter, brown sugar, and regular sugar until fluffy. Beat in eggs and vanilla. Add the flour mixture and then add in the chocolate chips and oats. Now when you're putting your cookies on the pan, you could use wax paper or  slightly greased sheet. I always usually use a table spoon or Ice cream scooper to take my batter from the bowl to the cookie sheet. Now bake for 12-14 mins.

Lemon Cranberry Scones

Well today it's time for yet another great baking recipe.

      Ingredients: 7 oz Flour
      2 oz Brown sugar
      1/4 tsp salt
     1/2 tsp baking powder
1/2 tsp vanilla powder or vanilla extract
     1/4 cup lemon zest
     1/2 cup turbinado
      3 oz cold butter
     1/2 cup whipping cream
     3/2 oz Dried cranberry
       1 egg
     1/2 tsp vanilla extract
First, preheat the oven to 350 degrees. In a bowl add the dry ingredients which includes, flour, brown sugar, salt, baking powder, vanilla powder, and the lemon zest. Add the cranberries next. Then you have to butter cut up into small chunks and slowly add one at a time to the mixture. Next, add the whipping cream. Allow the dough to collect together in the bowl, but do not beat it much with the mixture! It is supposed to be a dough. Before you put the dough in the oven, roll it up into a flat square and cut diagonally to give you your scones. After this in a separate bowl mix the egg with the vanilla extract for the wash. With the wash brush over the scones and top them with a little turbinado or brown sugar.

Now place the scones in the oven for 8-11 mins.

                          Chocolate Buttermilk Cake

salt
1 1/2 cups- buttermilk or rice/ soy milk
2 tsps- vanilla extract
1 3/4 cups- granulate sugar
1/2- butter or margarine (1 1/2 sticks)
            3 eggs

 Preheat oven to 350 degrease.

In one bowl combine your dry ingredients so, the cocoa, flour, salt, and baking soda. Then in another cup and the buttermilk and vanilla.
In a larger bowl mix sugar and butter until fluffy and creamy. Slowly add eggs to this mixture until its well mixed in. Add dry mixture a little at a time. And finally add the buttermilk/vanilla mixture.
Bake for 30-35 mins and you've got yourself a great cake.

So, this recipe is amazing, its moist and delicious. If you don't have all the ingredients don't worry I have some substitutions, for the buttermilk you can use soy milk or rice milk if you eat very healthy. If you want a little more creaminess, I suggest adding a little Land-O-Lakes Coffee Creamer, trust me on this, it works just as well. Depending on your oven you may need to eyeball you cake. If you want your cake to be moist, take a toothpick and keep checking it, if you notice that when you take the toothpick of the center of the cake and there are little crumbs and no more batter, then it should be ready!
